London and Athens represent two of the foundational chapters of Western history, placed back to back before Santorini offers something entirely different from either. Moving from the Thames to the Acropolis to the Aegean caldera in one week covers more genuine cultural range than any similarly short itinerary has any right to.
The cruise from Santorini with the winery visit and the Oia sunset experience is the activity I'd prioritize booking earliest. The catamaran fills fast in high season, and timing the Oia sunset stop for the final evening — when you already know the island well — makes the experience land considerably better than it would on arrival day.

Two nights on the South Bank with the London Eye at dusk, Westminster and the central landmarks, and the hop-on hop-off tour as a first-day orientation. The best use of any remaining time is the neighborhoods south of the river — Bermondsey Market on a Friday or Saturday morning, or the walk along the Thames path from Waterloo to Tower Bridge, which gives you the city's geography more clearly than any tour bus does.

The Acropolis guided visit and the museum together fill a strong first day. The museum is often treated as secondary to the hill itself, and that is a mistake — the Elgin Marbles context, the Caryatid porch, and the Parthenon frieze displayed at eye level are more compelling in the building's calm interior than any description suggests. The Plaka and Monastiraki neighborhoods fill the second day honestly, and a sunset drink from the hotel's rooftop pool with the Parthenon in direct view is the natural close.

Two nights in Imerovigli gives the island enough room for the cruise, the winery, and a slow final morning without any of it feeling compressed. The caldera view from the footpath outside the hotel at dawn — before anyone else is moving — is quieter and more striking than anything that happens later in the day.
The best time to visit these cities is generally in the shoulder seasons of spring and fall. England is at its warmest and sunniest from June to September. Greece is also ideal during this period, as it offers glorious weather and warm water from April to October.
