Saint-Paul-de-Vence is the stop I'd always highlight in that final full-day tour. The medieval village above the Var Valley has been home to artists since the 1920s — Matisse, Léger, Chagall — and the Fondation Maeght on its edge is one of the finest private collections of 20th-century art in Europe. Most Riviera visitors miss it entirely. My go-to recommendation: arrive there in the mid-morning and work backward through the day toward Antibes and Cannes in the afternoon, when the coast road is at its best in the late light.
The Cours Saleya market in Nice's Old Town rewards an early morning before it closes at noon. The flower stalls, the socca vendors, and the produce from the hinterland are the most honest version of what this city is still actually about, away from the promenade and the cruise traffic.
