This surprising place doesn’t only offer delicious food in a stunning location: it also owns a prestigious historical wine cellar, built during ancient times and discovered during the renovation works of the palazzo. It was only on this occasion that a majestic Roman structure was identified at the cellar floor: entirely made of squared blocks and incorporated in the sixteenth-century building that lays right above. Our aperitivo will be here, on the cellar floor (except if under maintainance or restoration works): a glass of sparkling prosecco wine, paired with a platter of traditional cured meats and cheeses from different Italian regions, just to whet your appetite. Afterward, you’ll move on to the actual dinner: a traditional dish of paccheri pasta with cacio e pepe sauce, followed by beef or fish course and a side of cheese and vegetables. Every dish will be, obviously, paired with a glass of superior wine carefully selected by the restaurant’s sommelier, and the dinner will end with a selection of desserts: an immersive experience in Italian food history and culture that you won’t forget.

Most visitors see the arena floor and the stands; the chambers beneath — where the animals and gladiators waited before their entrance — make the site more than a scenic ruin and give you a physical sense of its scale that the upper tiers alone can't provide. Tivoli and Assisi occupy genuinely different ground as day trips. Assisi is quieter, still faintly defined by its function as a place of pilgrimage. My go-to recommendation: arrive in Assisi early, before the organized tours from Rome fill the piazza. The town at that hour — stone streets, bell towers, the valley below — is the most honest version of the place, and the basilica at opening is worth the early start.
