This surprising place doesn’t only offer delicious food in a stunning location: it also owns a prestigious historical wine cellar, built during ancient times and discovered during the renovation works of the palazzo. It was only on this occasion that a majestic Roman structure was identified at the cellar floor: entirely made of squared blocks and incorporated in the sixteenth-century building that lays right above. Our aperitivo will be here, on the cellar floor (except if under maintainance or restoration works): a glass of sparkling prosecco wine, paired with a platter of traditional cured meats and cheeses from different Italian regions, just to whet your appetite. Afterward, you’ll move on to the actual dinner: a traditional dish of paccheri pasta with cacio e pepe sauce, followed by beef or fish course and a side of cheese and vegetables.
